These marinated mozzarella balls are a crowd-pleasing appetizer that comes together in minutes. Fresh mozzarella is soaked in a fragrant herb-and-garlic olive oil marinade, making it perfect for cheese boards, antipasto platters, or simply served with crusty bread.
Ingredients
- 250g fresh mozzarella balls (bocconcini or ciliegine)
- ½ cup extra virgin olive oil
- 3 cloves garlic, thinly sliced
- 1 tsp dried oregano
- 1 tsp dried chili flakes (adjust to taste)
- 1 tsp fresh or dried rosemary
- 1 tbsp fresh basil leaves, torn
- Zest of 1 lemon
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Drain the mozzarella: Pat the mozzarella balls dry with a paper towel and place them in a clean jar or bowl.
- Make the marinade: In a small bowl, combine olive oil, sliced garlic, oregano, chili flakes, rosemary, lemon zest, salt, and pepper. Stir well.
- Marinate: Pour the marinade over the mozzarella balls and gently toss to coat. Add the torn basil leaves and mix again.
- Rest: Cover and let marinate at room temperature for at least 30 minutes, or refrigerate for up to 3 days for deeper flavor.
- Serve: Bring to room temperature before serving. Garnish with fresh parsley and serve with toasted bread, crackers, or as part of a charcuterie board.
Tips
- The longer the mozzarella marinates, the more flavorful it becomes — overnight is ideal!
- Use the leftover herb oil as a dipping sauce for bread.
